I have several. My favorite saints often come from Patristics (i.e Church Fathers, etc.). I do enjoy the Church Fathers a lot. However, I have some outside of that era.
-St. Michael the Archangel, my Confirmation saint and the patron of my TLM chapel.
-St Pius X, destroyer of modernism. I think his warnings are very undermined and his Pascendi encyclical is a must read.
-St. John Chrysostom (favorite Greek Father). I love his writings on the Jesus Prayer, being a priest, and his commentaries on Scripture.
-St. Gregory the Great (favorite Latin Father). He made many contributions to the Roman Mass such as the codification of the Roman Canon and added the Pater Noster afterwards.
-St. Spyridon the Wonderworker (favorite forgotten saint). He is holding a brick because he proved the unity of the Trinity at the Council of Nicaea where he debated Arian philosophers by working a miracle with a brick. His relics are still incorrupt to this day. He is well known in Eastern Orthodoxy buy highly forgotten in the West.
Favorite Saint? Man, The Queen of Saints, Mary Immaculate. Then St.Joseph, Terror of Demons of course.
favorite Saint outside those two? St.Louis de Montfort, St.Norbert, St.Dymphna, St.Faustina, St.Therése, Ven. Mary of Agreda, St. JPII, St.Francis De Sales, St. John Vianney…. To name a few.
